- Sauté onions in a big pot until soft.

- Stir in sour cream and cream cheese until melted and well mixed.

Notes
For richer flavor, consider using rotisserie chicken or chicken thighs. If you prefer a thicker chili, mash some beans before adding. Leftovers reheat well; just add a touch more broth if needed.
