Wet Ingredients
  • 1/2 cup cold butter Chop it up; use real butter, not margarine.
  • 1 cup pitted medjool dates Chopped into small cubes.
  • 1 teaspoon vanilla extract High-quality vanilla makes a difference.
  • 1/2 cup milk Or cream for richer flavor.
  • 1 large egg Opt for this if you want richer scones.
Optional Add-ins
  • 1/4 cup nuts Such as walnuts or pecans, if desired.

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, combine all-purpose flour, baking powder, salt, and sugar.
  3. Cut in cold butter until the mixture resembles coarse crumbs.
  4. Stir in chopped dates, vanilla extract, milk, and egg until just combined.
  5. Work quickly to keep the dough cold.
Baking
  1. Scoop dough onto a floured surface and shape it into a circle about 1 inch thick.
  2. Cut into wedges or desired shapes.
  3. Place on a baking sheet lined with parchment paper.
  4. Bake for 15-20 minutes until lightly golden.

Notes

For a fun twist, you can replace some of the dates with dried apricots or add orange zest. To enhance sweetness, glaze with vanilla icing or sprinkle sugar on top before baking.
