Ingredients
  

Dry Ingredients
  • 2 cups all-purpose flour Regular all-purpose flour is fine.
  • 1 tbsp baking powder For fluffiness.
  • 1/2 tsp salt For flavor.
  • 1 tbsp white sugar A little sugar, as dates bring sweetness.
Wet Ingredients
  • 1/2 cup cold butter Real butter, chopped into pieces.
  • 1 cup pitted medjool dates Chopped into small cubes.
  • 1 tsp vanilla extract Good quality vanilla makes a difference.
  • 1/2 cup milk Or cream, if available.
  • 1 large egg For richer flavor (optional).
Optional Add-ins
  • 1/2 cup chopped nuts For added texture (optional).

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, mix together the flour, baking powder, salt, and sugar.
  3. Cut in the cold butter until the mixture resembles coarse crumbs.
  4. Add the chopped dates, vanilla extract, milk, and egg, mixing until just combined.
  5. Chill the dough for about 10 minutes in the fridge.
Baking
  1. On a floured surface, roll or pat the dough to about 1-inch thick.
  2. Cut into desired shapes and place on a baking sheet lined with parchment paper.
  3. Bake for 15-20 minutes or until lightly golden.
  4. Let the scones cool slightly before serving.

Notes

Best served warm with butter or cream cheese. They can be frozen before or after baking. To reheat, place in a preheated oven for a few minutes.
