  • 1 lb ground beef (80 to 90 percent lean) Juicy, with good flavor.
  • 1 small onion, diced Adds sweetness.
  • 1 medium green bell pepper, diced Adds sweetness.
  • 2 cloves garlic, minced Fresh for the best flavor.
  • 3/4 cup ketchup Provides a sweet-tangy body.
  • 1 cup tomato sauce Bright tomato flavor.
  • 1 tbsp Worcestershire sauce Adds depth and zip.
  • 1 tbsp yellow mustard Adds tang.
  • 1 tbsp brown sugar Balances the flavors.
  • 1 tsp apple cider vinegar Adds a touch of acidity.
  • 1/2 tsp smoked paprika Provides a smoky flavor.
  • 1/2 tsp kosher salt To taste.
  • to taste black pepper To taste.
  • 4 buns (soft potato or brioche) Toast them lightly before serving.

Method
 

Preparation
  1. Warm a large skillet over medium heat. Add a little oil.
  2. Sauté the diced onion and green bell pepper with a pinch of salt until softened, about 5 minutes.
  3. Add the ground beef and cook, breaking it up, until browned. Drain most of the fat if needed.
  4. Stir in the minced garlic for 30 seconds.
  5. Add ketchup, tomato sauce, Worcestershire, mustard, brown sugar, vinegar, smoked paprika, and salt and pepper.
  6. Simmer uncovered for 10 to 15 minutes, stirring occasionally, until thick and glossy.
  7. Taste and adjust salt, sugar, or vinegar as needed.
  8. Toast the buns, pile on the filling, and serve hot.

Notes

For added richness, you can stir in a tablespoon of butter at the end. Optional: Top with sliced pickles or shredded cheddar cheese.
