Ingredients
  

For the Quesadillas
  • 4 medium flour tortillas, 8 inches Use flour tortillas for the best crisp.
  • 1 cup shredded mozzarella cheese Use low-moisture mozzarella to avoid sogginess.
  • 1/2 cup pizza sauce or marinara Simmer if very thin to thicken.
  • 1/4 cup sliced pepperoni or preferred protein Options include cooked sausage, rotisserie chicken, or turkey pepperoni.
  • 1/4 cup chopped veggies Options include bell pepper, mushrooms, red onion, or olives.
  • 1 tablespoon olive oil or butter For cooking the quesadillas.
  • 1 teaspoon Italian seasoning
  • 1 pinch garlic powder Optional for added flavor.
  • 1 pinch red pepper flakes Optional for additional heat.
  • 2 tablespoons grated Parmesan Optional for a salty finish.

Method
 

Preparation
  1. Heat a large skillet over medium heat and add oil or butter until melted.
  2. Lay one tortilla in the pan and spread about 2 tablespoons of pizza sauce across it in a thin layer.
  3. Sprinkle 1/2 cup mozzarella evenly, add pepperoni slices and a small handful of veggies. Season lightly with Italian seasoning and garlic powder.
  4. Top with the second tortilla and press gently with a spatula.
Cooking
  1. Cook for 2 to 3 minutes until the bottom turns golden and crisp, then carefully flip and cook for another 2 to 3 minutes.
  2. Once the cheese melts and the tortilla is crisp, slide it onto a cutting board and let it rest for 1 minute before cutting into wedges.
  3. Repeat for the second quesadilla, adding more oil or butter to the pan if needed.

Notes

Keep the sauce thin and fillings light to maintain crispness. Avoid microwaving leftovers; reheat in a skillet for best results.
