Preparation
- Heat a large skillet over medium heat and add oil or butter until melted.
- Lay one tortilla in the pan and spread about 2 tablespoons of pizza sauce across it in a thin layer.
- Sprinkle 1/2 cup mozzarella evenly, add pepperoni slices and a small handful of veggies. Season lightly with Italian seasoning and garlic powder.
- Top with the second tortilla and press gently with a spatula.
Cooking
- Cook for 2 to 3 minutes until the bottom turns golden and crisp, then carefully flip and cook for another 2 to 3 minutes.
- Once the cheese melts and the tortilla is crisp, slide it onto a cutting board and let it rest for 1 minute before cutting into wedges.
- Repeat for the second quesadilla, adding more oil or butter to the pan if needed.
Notes
Keep the sauce thin and fillings light to maintain crispness. Avoid microwaving leftovers; reheat in a skillet for best results.
