Preparation
- Preheat the oven to 350°F (175°C).
- In a large bowl, mix together the flour, sugar, baking powder, and salt.
- In a separate bowl, beat the eggs and then stir in the toasted almonds.
- Combine the wet and dry ingredients until a dough forms.
Baking
- Divide the dough into two logs and place on a lined baking tray.
- Bake for 25-30 minutes until golden brown.
- Remove from oven and let cool for 10 minutes.
- Slice the logs into biscottis and return to the oven for an additional 10 minutes to crisp.
