Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix together the flour, sugar, baking powder, and salt.
  3. In a separate bowl, beat the eggs and then stir in the toasted almonds.
  4. Combine the wet and dry ingredients until a dough forms.
Baking
  1. Divide the dough into two logs and place on a lined baking tray.
  2. Bake for 25-30 minutes until golden brown.
  3. Remove from oven and let cool for 10 minutes.
  4. Slice the logs into biscottis and return to the oven for an additional 10 minutes to crisp.
