- In a mixing bowl, combine Kodiak pancake mix, almond milk, and the egg (if using).
- Stir gently until just combined, being careful not to overmix.
- If making pancakes, preheat a non-stick griddle over medium heat.
- For savory waffles, mix in chopped spinach, diced ham, and cheese to the batter.
- Pour the batter onto the griddle or into a preheated waffle iron.
- Cook pancakes for about 3-4 minutes on each side or until golden brown.
- For waffles, cook according to the waffle iron's instructions until golden and crispy.
Notes
Don’t overmix the batter, as some lumps are fine. Let the batter sit for a couple of minutes before cooking for extra fluffiness. If the batter is too runny, add more pancake mix as needed. Great for meal prep - pancakes or waffles can be frozen and reheated later.
