Ingredients
  

For the Cookie Dough
  • 2.5 cups all-purpose flour
  • 1 tablespoon baking powder
  • pinch salt
  • 0.5 cup unsalted butter, room temp
  • 0.75 cup sugar
  • 3 eggs
  • 3 tablespoons milk (regular or any plant milk)
  • 1 teaspoon vanilla extract
  • 1 zest of 1 lemon (or orange if you’re wild)
For the Glaze
  • 2 cups powdered sugar
  • 2-3 tablespoons milk
  • 0.5 teaspoon vanilla
  • lots sprinkles Like, don’t hold back!

Method
 

Making the Dough
  1. Cream together unsalted butter and sugar until fluffy.
  2. Add eggs, milk, vanilla, and lemon zest, mixing well.
  3. Mix in flour, baking powder, and salt to form a firm dough.
Baking
  1. Scoop out bits of dough and roll into balls.
  2. Place on baking sheet and bake until just lightly golden on the edges.
  3. Let cool before drizzling with icing and adding sprinkles.

Notes

Don’t over-bake for soft centers. Chill the dough if it’s sticky, and never skip the citrus zest for that special flavor!
