Ingredients
  

Main Ingredients
  • 1 lb Cubed chicken breast or thigh Thighs give more juiciness.
  • 2 tbsp Honey Can swap with brown sugar if needed.
  • 2 tbsp Soy sauce Use low sodium if preferred.
  • 3 cloves Garlic, minced Pre-minced garlic from a jar is acceptable.
  • 1 tsp Ginger, minced Optional for extra flavor.
  • 1 tbsp Cornstarch For thickening; optional.
Vegetables
  • 1 cup Bell peppers, sliced Use any color.
  • 1 cup Broccoli florets
  • 1 cup Carrots, sliced

Method
 

Preparation
  1. Heat oil in a pan over high heat.
  2. Sizzle cubed chicken until golden brown and cooked through, about 5-7 minutes. Remove from the pan.
  3. Add the vegetables to the same pan and stir-fry for 2-3 minutes.
Cooking
  1. In a bowl, whisk together honey, soy sauce, garlic, ginger, and a splash of water.
  2. Pour the mixture over the cooked chicken and vegetables in the pan.
  3. Let it bubble together for 2 minutes until everything is glossy.
  4. Serve over rice or directly from the pan.

Notes

For tender chicken, toss with a bit of cornstarch before cooking. High heat is key; don’t crowd the pan. Feel free to substitute with shrimp, tofu, or beef for variety.
