Preparation
- Pat the chicken dry with paper towels and pound to an even thickness if necessary.
- Rub the chicken breasts with olive oil and your chosen seasoning or marinade.
- Let it sit for 20 to 30 minutes if marinating. Meanwhile, preheat the grill to medium-high.
Grilling
- Oil the grill grates if needed and place the chicken on the grill.
- Cook for about 4 to 6 minutes per side, checking for an internal temperature of 160 to 165 F.
- Flip once and avoid pressing down on the chicken to keep juices intact.
Resting and Slicing
- Transfer the chicken to a plate, squeeze some lemon juice on top, and tent loosely with foil.
- Let it rest for 5 minutes before slicing against the grain.
