Ingredients
  

For the shrimp scampi
  • 1 lb shrimp, peeled and deveined Fresh or frozen; if frozen, thaw in cold water.
  • 4 cloves garlic, minced Chop finely or use a press for best flavor.
  • 1/2 cup white wine Can substitute with chicken broth and a splash of lemon juice.
  • 1/4 cup lemon juice, fresh For brightness and flavor.
  • 1/2 cup butter More butter equals more flavor.
  • 1 tsp red pepper flakes Optional for a spicy kick.
  • 8 oz linguine or spaghetti Cook according to package instructions but slightly less.
  • Salt to taste
  • Pepper to taste
  • 1 tbsp lemon zest Adds a fresh flavor boost.
For serving
  • 1 loaf crusty bread For mopping up the sauce.
  • 1 cup steamed broccoli Optional side for extra veggies.
  • 1 cup simple green salad With a zesty vinaigrette.

Method
 

Preparation
  1. Cook the pasta according to package instructions, but reduce the time by 1-2 minutes. Drain and set aside.
  2. Chop garlic finely and have all ingredients ready for quick preparation.
Cooking
  1. In a large skillet, melt the butter over medium heat.
  2. Add minced garlic and sauté until fragrant but not burnt.
  3. Add shrimp, cooking until they turn bright pink, about 2-3 minutes per side.
  4. Pour in the wine (or chicken broth) and lemon juice, and bring to a simmer.
  5. Add cooked pasta and toss until well coated in the sauce.
  6. Stir in lemon zest and red pepper flakes (if using). Season with salt and pepper to taste.
Serving
  1. Serve immediately with crusty bread, and enjoy with steamed broccoli and a salad, if desired.

Notes

For best results, do not overcook shrimp. Use fresh ingredients for the best flavor. Leftovers can be added to salads.
