Ingredients
  

Dry Ingredients
  • 2 cups plain flour All-purpose flour works well.
  • 2 teaspoons baking powder
  • 1 pinch salt
  • 2 tablespoons sugar
Wet Ingredients
  • 1/3 cup cold butter, cubed The colder the better.
  • 2/3 cup milk Plus a splash more for brushing tops.
Add-ins
  • 3/4 cup pitted dates, roughly chopped You can use Medjool or Deglet Noor dates.
  • 1/4 teaspoon cinnamon Optional for a hint of spice.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine the flour, baking powder, salt, and sugar.
  3. Add the cold, cubed butter to the dry ingredients and rub it in with your fingers or a pastry cutter until the mixture resembles coarse crumbs.
  4. Stir in the chopped dates and cinnamon if using.
  5. Pour in the milk and mix until just combined, being careful not to overwork the dough.
Baking
  1. Turn the dough out onto a lightly floured surface and pat it into a circle about 1 inch thick.
  2. Cut the dough into 8 wedges and place them on the prepared baking sheet.
  3. Brush the tops with a little extra milk.
  4. Bake in the preheated oven for about 15 minutes, or until lightly golden.
  5. Remove from the oven and allow to cool on a wire rack.

Notes

These scones can be frozen after baking. Wrap tightly and store in the freezer. Warm them gently when you want a treat. Feel free to experiment with add-ins like orange zest or chopped nuts.
