Main Ingredients
  • 2 pounds Boneless, skinless chicken breasts Thighs work too, just trim the fat.
  • 1 can Cream of chicken soup Use the traditional variety for richness.
  • 1 block Cream cheese Avoid low-fat for best results.
  • 1 packet Italian dressing mix This adds significant flavor.
  • 1 cup Chicken broth Add more if it looks dry during cooking.
  • 1 pound Pasta of choice Penna or rotini hold up best.
  • to taste Freshly ground black pepper Salt can be added if desired.
Optional Ingredients
  • to taste Shredded Parmesan or cheddar cheese For additional flavor.
  • 1 cup Fresh spinach Add near the end for freshness.
  • 1/2 cup Sun-dried tomatoes Optional for extra flavor.

Method
 

Preparation
  1. Place chicken breasts in the crockpot and season with salt and pepper.
  2. Add the block of cream cheese on top of the chicken.
  3. Pour the cream of chicken soup over the cream cheese.
  4. Sprinkle the Italian dressing mix over the top.
  5. Pour in the chicken broth and cover the crockpot.
Cooking
  1. Set the crockpot to low for 4-5 hours or high for 2-3 hours.
  2. Once the chicken is fully cooked and shreds easily, shred it directly in the crockpot using two forks.
  3. Meanwhile, cook the pasta separately until just al dente and drain well.
Combining
  1. Stir the cooked pasta and any additional ingredients into the creamy mixture in the crockpot.
  2. Let it sit for a few minutes to absorb the flavors.

Notes

For best results, taste as you go. If the sauce is too thick, add a splash of broth. Avoid adding pasta too early to prevent mushiness. Leftovers can be stored in an airtight container for 3-4 days or frozen without pasta for later use.
