Method
 

Preparation
  1. In a large bowl, combine the cooked chicken, dried cranberries, and chopped celery.
  2. In a separate bowl, mix together the mayonnaise and Greek yogurt (if using).
  3. Add the mayo mixture to the chicken salad and mix until everything is well coated.
  4. Fold in the diced apple if using.
  5. Refrigerate the salad for at least 30 minutes before serving to let the flavors meld.

Notes

Try serving it in a buttery croissant, over romaine lettuce, or with crackers and cheese. For a special touch, sprinkle with extra cranberries and parsley before serving.
