Ingredients
  

For the Soup Base
  • 4 slices bacon Cooked until crispy
  • 1 medium onion, chopped
  • 3 cloves garlic, minced Add extra if you love garlic
  • 1 lb chicken breast, chopped Or use rotisserie chicken for a quicker option
  • 2 tbsp ranch seasoning mix This is the secret ingredient!
  • 4 cups chicken broth
  • 8 oz cream cheese Do not use low-fat cream cheese
  • 1 cup cheddar cheese, shredded Plus extra for topping
  • 1 cup carrots, shredded
  • 1 cup celery, chopped

Method
 

Cooking the Soup
  1. Cook the bacon in a large pot until crispy, then set aside while leaving some bacon fat in the pot.
  2. Sauté the onions and garlic in the bacon fat until softened.
  3. Add the chopped chicken breast to the pot and cook until golden.
  4. Sprinkle in the ranch seasoning and mix well.
  5. Pour in the chicken broth and add the cream cheese and cheddar cheese, stirring until melted.
  6. Add the shredded carrots and chopped celery, stirring often until the soup thickens.
  7. Finally, mix in the cooked bacon and garnish with extra cheese and scallions if desired.

Notes

You can customize the soup by adding vegetables like spinach, corn, or peas. For spice lovers, consider adding sriracha or hot sauce. For a lighter version, you can use turkey bacon and adjust the cream cheese quantity for a soupier texture.
