Method
Preparing the Crust
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, combine cold butter and flour.
- Mix until crumbly, adding cold water as needed.
- Press the dough into a pie pan and dock the bottom with a fork.
- Chill the crust for 15 minutes before baking.
- Pre-bake the crust for 10 minutes until slightly golden.
Making the Filling
- In a bowl, whisk together the sugars, eggs, and vanilla.
- Gently fold in the chocolate chips and salt.
- Pour the filling into the pre-baked crust.
- Bake for an additional 20 minutes or until set.
Cooling and Serving
- Let the cookie pie cool for at least 30 minutes before slicing.
- Serve warm or at room temperature, optionally with ice cream.
Notes
Store leftovers in an airtight container for up to 2 days or refrigerate for longer. This pie can also be frozen for up to a month. Experiment with mix-ins based on your cravings!
