  • 1 cup cooked chicken Rotisserie chicken is a game-changer
  • 1 cup frozen peas and carrots blend Easy to use
  • 2 units eggs
  • 2-3 tablespoons soy sauce Essential for flavor
  • 1 teaspoon sesame oil Optional, but adds flavor
  • 2 units green onions, sliced

Method
 

Preparation
  1. Chop the chicken into bite-sized pieces.
  2. Heat the pan to a temperature higher than normal.
Cooking
  1. Cook the chicken pieces until done and set aside.
  2. Add the mixed vegetables into the pan.
  3. Crack in the eggs and scramble them in the pan.
  4. Add the cold rice, breaking up any large clumps.
  5. Return the cooked chicken to the pan and stir in the soy sauce and sesame oil.
  6. Stir everything until well mixed and heated through.

Notes

For best results, always use cold rice to prevent mushiness. Rotisserie chicken adds flavor and saves prep time. Consider adding fish sauce or sugar to soy sauce for extra depth. Be sure to cook on high heat for crispy bits.
