Ingredients
  

Bread and Fillings
  • 2 slices Ciabatta or sourdough bread These breads maintain their shape and crisp up beautifully.
  • 4 oz Fresh mozzarella Slice about 1/4 inch thick and pat dry.
  • 1 medium Tomato Ripe but not mushy (Roma or vine-ripened preferred).
  • 4 leaves Fresh basil Use whole leaves or torn pieces.
  • 1 tbsp Olive oil or butter For brushing the outside of the bread.
  • 1 tsp Balsamic glaze Optional but offers a sweet-tangy finish.
  • to taste Salt and pepper Enhances the flavor of the filling.

Method
 

Preparation
  1. Warm a skillet over medium heat.
  2. Brush the outside of both slices of bread with olive oil or butter.
  3. On the inside of the bottom slice, layer the mozzarella, tomato, and basil, adding a pinch of salt and pepper.
  4. Drizzle a small amount of balsamic glaze on top, being cautious not to use too much.
  5. Top with the second slice of bread.
Cooking
  1. Place the sandwich in the hot pan and press it down with another skillet or a heat-safe plate.
  2. Cook for 2 to 3 minutes, then check for a golden brown color underneath before flipping.
  3. Press again after flipping and cook for another 2 to 3 minutes until the cheese has melted completely.
  4. Let the sandwich rest for 60 seconds before slicing to allow the cheese to set.
  5. Slice the sandwich with a serrated knife for clean edges.

Notes

If you're sensitive to soggy bread, slice your tomatoes and let them drain on a paper towel for a couple of minutes. A pinch of salt helps draw out excess moisture. For different variations, consider adding pesto or avocado inside the sandwich.
