Ingredients
  

Base ingredients
  • 2 tbsp Butter For flavor.
  • 1 medium Yellow onion Chopped to your preference.
  • 2 cloves Garlic Add more if you like a kick.
  • 4 cups Fresh broccoli Chopped into bite-sized bits, frozen works too.
For the soup
  • 8 oz Sharp cheddar cheese Freshly grated is preferred.
  • 1 cup All-purpose flour To thicken the soup.
  • 3 cups Milk Use low-fat for lighter version.
  • 1 cup Chicken or vegetable broth Adds required moisture.
  • to taste Salt
  • to taste Pepper
  • a pinch Nutmeg Optional but adds depth of flavor.

Method
 

Preparation
  1. In a large pot, melt the butter over medium heat.
  2. Add the chopped onions and garlic, cooking until soft and sweet.
  3. Stir in the flour and let it cook for a few minutes until bubbling.
  4. Gradually whisk in the chicken or vegetable broth and milk to avoid lumps.
Cooking
  1. Add the broccoli and simmer until tender but still bright green.
  2. Reduce the heat and stir in the cheddar cheese until melted and combined.
  3. Season with salt, pepper, and a pinch of nutmeg to taste.
Serving
  1. Serve hot, with optional garnishes such as extra cheese, crispy bacon, or crusty bread.

Notes

For best results, let the onions and garlic cook properly and add the cheese off the heat to avoid goopy strings. This soup can be frozen, but dairy may separate upon thawing.
