Ingredients
  

For the Marinade
  • 4 fillets Cod fillets (1 to 1.5 inches thick) Fresh or frozen
  • 2 tablespoons Olive oil
  • 2 tablespoons Melted butter
  • 2 cloves Minced garlic
  • 1 tablespoon Lemon zest
  • 2 tablespoons Lemon juice Freshly squeezed
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 1/2 teaspoon Black pepper
  • 1/4 teaspoon Crushed red pepper (optional) For extra heat
For Serving
  • 1 Fresh lemon wedges
  • 2 tablespoons Chopped fresh herbs (parsley or dill) For garnish

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. Pat the cod fillets dry with paper towels.
  3. In a bowl, whisk together olive oil, melted butter, minced garlic, lemon zest, lemon juice, paprika, salt, and black pepper.
  4. Brush the marinade onto both sides of the cod fillets.
Baking
  1. Line a sheet pan with foil or parchment paper for easy cleanup.
  2. Place the cod fillets on the prepared sheet pan.
  3. Bake for 12 to 15 minutes, or until the cod flakes easily and looks opaque.
  4. If desired, broil for 1 minute at the end for added color.
Serving
  1. Remove the cod from the oven and let it rest for 2 minutes.
  2. Serve immediately with fresh lemon wedges and sprinkle with chopped herbs.

Notes

This recipe is easy to scale up for guests by doubling the marinade and using two pans. It pairs well with garlic rice, herbed couscous, or a light salad.
